Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt.
3. In a large bowl, beat together the oil, sugar, eggs, molasses, and buttermilk until well combined.
4. Gradually stir the dry ingredients into the wet ingredients until just combined. Fold in the stem ginger and raisins.
5. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
